Last evening I posted about this Father's Day Meal that was modern, yet it satisfied the whole family with local and Asian flavours that we are familiar with. This post shows the close up photos of the dishes, and I'll talk about some of the notable ones.

(Cover Photo) VU’s Seafood Platter - Outstanding. I liked the grilled smokiness of the prawns, and the sweetness in the white butter sauce due to the use of fish bones. Fresh seafood in a creamy sauce that didn't feel overly rich.

(Second Photo) Hamachi Sashimi. No wasabi, and it was not necessary. Instead, it's refreshed by pomelo, and kaffir lime in the shoyu dressing. Fresh buttery flavours of hamachi with these citrus elements to refresh it. And it was the prettiest dish of the lot, having travelled well in ice-insulated packs for delivery.

(Third Photo) Grilled Octopus. While it sounds funky with pineapple gohujang sauce, the taste is actually familiar and something close to our hearts. To me, it's like the sweet and sour sauce in our "ko lo yok", with nuances of innovative flavours. Love it.

(Fourth Photo) Spiced Duck Breast. Cooked medium rare with pink centre, it's like a French dish but layered heavily with Asian influences such as yogurt pesto cucumber to refresh the rich peanut poultry jus served with the duck.

I just had the best menu that impressed my whole family for a Father's Day dinner. This is a dinner that fixed a dilemma - I like something modern and progressive, something unusual, yet I yearned for comforting Asian flavours that are emotive. This meal was innovative yet satisfying the whole family with local and Asian flavours that we are familiar with.

If there's someone who can pull this off, it's Chef Ace, a Singaporean Chef who has cut his teeth at some of the best Michelin-starred restaurants in Asia and Singapore. That includes Flowerchild Restaurant in Seoul, and some modern European restaurants in Singapore such as the 3-Michelin-starred Les Amis, Pollen, and Bacchanalia. He also opened and co-owned Restaurant Ards, a modern Asian fine dining restaurant.

At 1-V:U, Chef Ace presents his creative and geo-focused culinary programme influenced by flavours across Southeast and Northeast Asia. So expect bold and progressive take on North-East Asian cuisine in the restaurant’s Communal Menu.

This Father's Day, expect such signature from Chef Ace too, a modern cuisine with Asian flavours, delivered to your home. It was a meal that impressed, and a meal to remember.

These are fresh oysters with Head Chef Ace's (@ace_tan_sg) take on Nam Jin and pickled shallots, before being crowned with Singapore Sling granita.

I was acquainted with Chef Ace sometime back, and it's so good to see him again. He is a Singaporean chef who worked at Flowerchild Restaurant in Seoul, and some of Singapore’s best modern European restaurants such as the 3-Michelin-starred Les Amis, Pollen, and Bacchanalia. He also opened and co-owned Restaurant Ards, a modern Asian fine dining restaurant.

This oyster is an example of Chef Ace's creative and geo-focused culinary programme influenced by flavours across Southeast and Northeast Asia. Besides this, expect bold and progressive take on bar food at the Day Club such as Mala-gherita Pizza ($20), East Java Beef Pasta ($23), and Kaffie Lime Seafood Ceviche ($18).

Sentosa is a oasis from the hustle and bustle of city life, but 1-V:U takes it up a notch higher. It overlooks the Palawan Beach and stunning views of the Singapore Straits, as well as the beautifully landscaped pool of the Outpost Hotel. It's a luxe island party life from day to night, with its exciting entertainment line-up of international and local DJs, creative culinary artistry and world-class bar program.

One of the dishes served at the Day Club is this Crispy Cauliflower Florets ($11), served with curry kombu dressing and sliced green grapes. Or opt for a more refreshing option with the Kaffir Lime Seafood Ceviche ($18), with tuna, prawns, hamachi, avocado, tomatoes mizuna and roasted peanuts tossed in a kaffir lime dressing, served with prawn crackers.

We had these bar bites with Moonlight Swizzle ($20), that came with Fresh Green Grape, Kaffir Lime Leaf, Bombay Sapphire, and Martini Bianco; Sunset on V:U ($22) with Sailor Jerry Rum, Malibu Coconut, Homemade Pandan Syrup, Finest Call Mango Puree; and Summer Fling ($18) with Fresh Kumquat, Roku Gin, Giffard Elderflower, Giffard Vanilla Syrup.

This rooftop poolside bar is the latest addition to 1-Group's portfolio of iconic restaurants, cafes, bars, and clubs that include 1-Altitude, Stellar, The Summerhouse, TXA and UNA at Alkaff Mansion. They're F&B centric, but they're also all about the lifestyle.

This is the V:U Wagyu Patty Melt at the few weeks old @1.VU.SG where the juicy patty is sandwiched between Japanese milk bread toast. The milky toast is delicious and the overall flavour of this dish is made better with the addition of cheddar and gruyere cheese. Can’t say no to the accompanying chips too!

1-V:U, also pronounced as one view, is a new Day Club and Restaurant concept under one roof located in The Outpost Hotel! We started with some addictive bites like Chips with Kombu Truffle Oil and Crispy Cauliflower Florets, though we have to say that we were also very distracted by the amazing view of Sentosa and the sea here as well.
