So named because of their Hainanese heritage, this stall serves a distinct 'dry' rendition that has been enjoyed by many for over 30 years.
.
Here, the robust prawn and pork stock is fully absorbed by each fresh batch of long cylindrical yellow egg noodles and thin bee hoon / rice vermicelli noodles, carefully tossed with crisp bean sprouts and wispy egg.
.
Carries an appetizing smoky grainy savoury salty sweet eggy flavour. No added sliced pork though.
.
Chunks of crunchy deshelled prawns and bouncy squid have also taken on the wok hei / breath of the wok, bursting with smoky sweet savoury flavour.
.
The kicker is the duo of chili - the savoury salty spice flavours of the sambal belachan, and the sharp spicy burn of the bird's eye chili / chili padi.

If you like a drier version try this!

The Hokkien mee of the OG FoodKing fame but I would only rate it 4/5 stars. This is of the dry version but is super rich in flavours, with lingering wok hei. However I find that the chilli is a bit lacking and I might be bias because I generally prefer the wet version.

To many, this stall at Golden Mile serves the best dry 𝗛𝗼𝗸𝗸𝗶𝗲𝗻 𝗠𝗲𝗲 ($5) in Singapore. Yes, they can be inconsistent but these retro flower-adorned plates have the potential to floor you with an astounding home run.

For starters, it's not easy to locate a good plate of dry-style Hokkien Mee. It's a different experience with how sapid seafood flavours are locked into each strand of moist, bouncy noodle — not gratuituously sloppy or borderline slimy, which the ubiquitous wet variety can be guilty of.

You won't find many plates rivalling this in satiating your appetite for rich, bold seafood flavours. The unbridled umami, the tasteful whiffs of smoke, the medley of chilli heat, and the complementary citrus twist — simply chef's kiss.

Normally I will prefer the wet version, but this is very good dry Hokkien mee.
Located at basement Golden Mile Food centre, the Hokkien mee using more thin bee Hoon, got wok hei, flavourful and the chilli very power 🤩.

Hainan Fried Hokkien Prawn Mee is a stall at Golden Mile Food Centre (#B1-34) that sells the dry version of hokkien mee ($5). Compared to the other hokkien mee I have tried, this version is alot less saucy, it uses thin bee hoon instead of thick bee hoon but it is still quite delicious🤤 The wok hei is prominent, the springy noodles absorb the flavourful prawn broth and fragrance of the garlic completely and the spicy chilli gives it a kick. No regrets queuing for this:)!
