this must be some especially prized variety of abalone but it was difficult for my (admittedly uneducated) palate to detect the difference from an ordinary abalone puff... pastry was nice and buttery and the extra abalone sauce on the side was lovely

This innocent looking little parcel is chock full of sinfully complex flavors and textures! Peeking out from the ice cream cone textured biscuits is a healthy dallop of foie gras ice cream topped with delicate ribbons of shiso and sprinkled with 3-5 year pickled watermelon rind!

I immediately and breathlessly blurted, "Chef, did you say BELLY???"... and when he calmly reconfirmed, I floated above my seat in a helium daze, euphoric in anticipation of what he'd done with my favorite piece of lamb... even the dizzying heights of my expectations were exceeded by this dish... aside from the fatty, perfectly seasoned lamb belly, I also really enjoyed the crispy chickpeas!
