It was an intense flavour coming from dried cuttlefish stir-fry with dark sauce, chilli and lady fingers. The meat was succulent and of course, the best part was the soft pig skin with a layer of fats that easily melted in my mouth. In fact, I loved how it had already been cut into smaller pieces, making it easier to enjoy the meal.


With a lot of tender pork ribs, liver, and innards, dried bean curd skins and vegetables, I found the portion to be rather generous for 2 pax. The soup was so addictive that we'd asked for an extra bowl of soup. In fact, this has been my favourite bak kut teh for the past few months!
Providing a more dignified employment opportunities for ex-offenders and ex-drug abusers has been the social mission for Soon Huat Bak Kut Teh. At its Timbre+ outlet, they stretch their mission to reach out to People with Disabilities (PWD), which I personally think is a very daring move. Jabez himself was an ex-convict and he managed to set up this business in his effort to give back to the society. It was definitely far from a smooth-sailing journey, but I could see his strong determination and I respect him so much for that.

As part of Singapore's inaugural #FestivalForGood which aims to raise awareness of F&B social enterprises, the Singapore Centre for Social Enterprises (raiSE) has organised #DineForGood where diners can be #partofthegood and enjoy discounts when they patronise eight local social enterprise eateries participating in this event.
First up is Malaysian-style BKT from Soon Huat Bak Kut Teh! They offer Malaysian-style BKT which is more herbal-based than the peppery variants we are used to. However, be assured that their soup still packs a punch, and is incredibly flavourful and savoury from all the ingredients being cooked with it. In fact, we had to get a refill because we couldn't get enough of it!

Something unique to Soon Huat would be their dry bak kut teh. They take a bit of broth, dark soy sauce, and dried cuttlefish(!) and fry the ribs along with other spices to create something that's jam-packed with flavour. The saltiness and fragrance from the cuttlefish in particular really elevated the dish in my opinion, while the sauce was really tasty and coated the ribs nicely.

Their pork ribs were really stellar - the founder, Jabez Tan, said that they used baby ribs, which results in an incredibly tender rib that literally falls off the bone. I also enjoyed the addition of pig liver, stomach and the crispy tofu skin that brings some variety into the dish.

What's makes it even better to dine at Soon Huat is that you will be helping to further their social mission, which is to provide ex-offenders and ex-drug abusers meaningful employment opportunities and training in culinary and management skills. Additionally, their outlet at Timbre+ is also reaching out to People with Disabilities (PWD) and ex-offenders at that outlet will provide training to their PWD employees.

The founder of Soon Huat Bak Kut Teh, Jabez Tan, explained to us that his bak kut teh is brewed in the Malaysian style, which entails a non-peppery, slightly more herbal soup. Soon Huat's iteration is light on the herbs however, as a pleasant tang of soy sauce shines through the light yet hearty soup. The soup itself is plenty pleasant, being sumptuously savory thanks to the addition of pork ribs, secret spices, cuttlefish (!) and...pig skin!

Unlike other places, Soon Huat's teh is slightly thicker in consistency thanks to the collagen from the added pig skin, plus it has the enjoyable extra effect of being extra smooth. Also, you get an additional dimension of savoriness thanks to the cuttlefish that's been reduced in the stellar soup.

As for the all important pork ribs, they are magnificently meaty, and they're satisfactorily tender to boot. In fact, Soon Huat's portion for 2 pax, which is really reasonably priced at just $15, is plenty generous with the pork.
