Read a great number of reviews on the best beef noodle eateries in Taipei and eventually settled on two to visit; this one, located in the outskirts of Ximending, was made my dinner venue on my first night there.
The shop opens at 4.30pm for dinner service, but you'll want to arrive slightly earlier, before the overeager masses arrive.
The noodles here are cooked well and retain a soft but chewy bite, served in a bowl of beef consommé that's apparently brewed over 16 hours; it's made even more flavourful with Niu Dian's own special beef fat "butter", which you can add a little or a lot of at your own discretion. What really hits the spot are the thick slabs of oh-so-tender beef trimmed with globs of gelatinous fat that nearly melt in the mouth.
