Making probably the best Neapolitan-style pizza in Tokyo, Seirinkan is 3 storeys of dark wood, dim lights and steampunk vibes aplenty, punctuated through by a wrought metal spiral staircase. As featured on Netflix’s Ugly Delicious, Chef Susumu Kakinuma has been at the pizza game for long time, spending a year in Italy eating at the best pizzerias before coming home to set up his own shop, Savoy. Seirinkan is his second venture after closing down Savoy, which also has several sister branches.

They serve only 2 pizzas here, the margherita and marinara. Both are excellent, with an incredibly light yet puffy, chewy, charred crust that takes only slightly under 60 seconds to cook in the incinerator-esque pizza oven on the first floor. If I were to choose a favourite, it would be the marinara topped with sublimely ripe tomatoes, lashings of olive oil, and the aromatic punch of garlic.

This is simple, unpretentious cooking meant to bring the fullest out of the quality ingredients(all local, by the way) used.
