邱家小卷米粉

There are two famous squid noodles along the same stretch of road here in Tainan - Qiu Jia Squid Noodles and Ye Jia Squid Noodles. This here at Qiu Jia was the one I liked more! We joined the queue during an odd hour but it was still quite a long wait (mad summer heat). Thank goodness we were rewarded with this bowl - super fresh and crunchy cuts of squid swimming in a clear savoury soup. The broth’s packed with a subtle natural sweetness and hints of that seafood freshness! At a glance, the noodles look like the thick beehoon we have here in SG, but they’re totally not. It’s quite hard to describe what they taste like but they are thicker and firmer. So good!
