Mazesoba or "mixed noodles" in Japanese, is a broth-less form of ramen which is popular in the sweltering summer heat.
It is also very popular in Seoul as we had to wait nearly 30 minutes to be seated at Kanda Soba, near Gyeongbok Palace.
I love their soba which was soft yet al dente and can slurp it all day long in that amazing meat-based sauce which is made of soy sauce, pork lard and various topping. They recommend finishing the noodles first before mixing in a bowl of rice. It is absolute carbo-licious but I will probably regret it when I step on the scales.
