Pork and liver stew

It's somewhat earthy, quite thick and very sweet. Homely but the pork was quite tough and the liver wasn't cooked well at all

Papaitan(Top left) was a beef innards stew, it's quite bitter but the flavours were great and the innards were all cooked perfectly. Astounding execution

Bagoong pumpkin(Bottom left) is basically pumpkin with tiny shrimp sauce. They didn't use it very liberally so the nice bursts of saltiness were nice in the sweet dish(from the pumpkin)

Lechon sucks. Dry and the skin was hard, very little crisp.

Ginataang means anything cooked w coconut milk and bilo bilo is this dessert w glutinous rice balls and various ingredients, kinda like bubur chacha

Just like bubur cha-cha, there's sweet potato inside and there's a fleshy fruit inside as well, which was delicious. Supposed to be jackfruit usually I think but I couldn't quite recognise what it was. However their glutinous rice balls was really bad, hard and crusty in the middle and has no texture on the exterior.

That being said, the liquid? Was more like a custard. Is almost like soya pudding in texture and was absolutely delicious

Top left was pumpkin w sakura shrimp? Nice sweetness complemented by bursts of savouriness, the best veggie dish I've had from them.

To its right is igado(simmered spiced pork liver). Idk if it's normally done like this but here there's a lot more than just liver, there's slivers of meat and fat as well. Overall there's an earthy flavour which was quite delicious but it's from some condiment, not the pork itself(given the name, ofc it's spiced right). There's no porky stench, it's basically a hearty stew

Bottom left was pig ears and other offals in a creamy sauce that's somewhat like mayo? But still drastically different. The tang is there but it's not as rich, and it's nut based. In fact the creaminess from the nut was more surfeiting than from the cream, get this to share. Worth a try for the uniqueness, not as hearth as the igado

Finally the bottom right is a bitter beef soup. As usual their beef soups are amazing but this bitterness grows more intense as u take sips, so much so that they warn you when u order this. The first sip was completely fine but it gradually grew unbearably bitter haha, should have heeded her warning

It's smooth and slightly starchy, kind of like purple yam ice cream mixed w puree. It's fragrant tho there's a bit of artificial taste (abit like playdough). Overall it's pretty ok

Tocino is a sweet bacon-y cured meat. A lot more sweet than your usual bacon tho, there's resemblance to bawkkwa also in terms of flavour but the spices are abit different

Texture wise it's what you would expect of cured meat, there's bite but it's somewhat soft as well, tho not consistently. the fats were pretty good too. Worth a try

The sauce drizzled over the rice is from the sarciadong (tomato egg sauce served with milkfish). It's got a nice amount of savouriness, I was quite surprised at how good it was

The bitterguord was very average tho, could have been fried more

Their soup is consistently spectacular, I learnt that it's their bulalo soup. No wonder it's so good
