Marinated for at least 2 days so that the meat is suffused in that funky prawn paste salty and sour flavour all “har cheong gai” afficionados love, the massive slabs of succulent chicken are twice deep-fried in variations of batter to achieve a shatteringly crisp and web-like outer coating that lends itself to a highly satisfying crunchiness. The flavoured rice and potent chilli sauce on the side are perfect accompaniments to the star of the dish as well.

First bite, WOW! i have been wanting to try these chicken wings and when they opened a branch in Maxwell i was so happy. For someone who grew up in an island where good shrimp paste is commonly used, and produced locally, i like everything with shrimp paste/belacan or terasi we call it in Indonesia. It has this umami taste that can boost any dish, i even experimented it in a prawn aglio olio pasta, so very good! Anyway, this Har Cheong Gai deserves the title one of the best in Singapore, if not the best, well the best i have tasted so far. Marinated for 2 days in shrimp paste, and it takes 2 batters to create such crispiness that is just.. perfect!!

Set B: Atas Cutlet ($6.80)
- Very fragrant chicken rice
- Egg was crispy but not runny
- Very crispy chicken with lots of prawn paste flavour
- But chicken was rather dry and tough
- A substantial portion of boneless chicken cutlet was given
- Love the citrusy sambal chili, mildly spicy
The chili really helped to tie the fried chicken and rice together which are both generally oily dishes, cutting through the richness of it and providing some moisture to the dish as well. It may not be the best har cheong gai I've had but it is definitely an elevated version in terms of the extra crispiness due to it being double-fried and its pairing with an aromatic chicken rice and tangy chicken rice chili.

Overall: 8/10 (Worth trying if in the area)

The Atas Cutlet set ($6.80) from Ah Tan Wings is my ultimate guilty pleasure. The shrimp paste chicken cutlet is super fragrant, crispy on the outside and juicy on the inside! It is on par with the stall’s signature chicken wings, perhaps even better since it is boneless👏🏻 The chicken cutlet goes very well with the fragrant rice and sunny side up. The chilli has just the right amount of heat and tanginess to keep the jelakness at bay - I find myself returning to the stall for refills😛!

I love har cheong gai and have been hearing so much about Ah Tan Wings! We went with just the wings, but they also sell them as a meal with 2 wings, rice and a fried egg at $5.20. Perhaps our batch was a little over fried, as while we enjoyed the crispy batter, the meat was a touch dry.

Fried to a crispy golden brown, this chicken cutlet was so crispy I was afraid my plastic utensils were gonna break every time I try to pull them apart into smaller pieces. Full of flavour, this plate of cutlet rice was definitely worth the price tag, with rice and chilli that tastes like those of chicken rice. ⁣
