The name comes from the use of two types of eel, unagi and anago, in crunchy tempura form. The roll is topped with foie gras, and laid in ponzu mayo. The textures and tastes complement each other nicely. Of the rolls we tried, this was my favourite.

One of the cold starters, you can either get AB Tuna Pizza ($26), AB Mushroom Pizza ($20), or a combination of both. The pizza is thin and crisp, and truffle oil gives it a delicious fragrance.

Can’t recall the name of the mocking tail which has lots of cranberries and bubbly. Dolores, it shall be named, and remembered by.

Akira Back’s dishes never fails to exemplify how painstaking it must have been to create not a fusion dish, but to fuse two great dishes as one. menu. Imagine the ever so popular “sio bak” (crispy pork belly) dabbed with miso rolled in between a thin layer of moist and turgid Japanese rice, topped with refreshing coleslaw of cabbage, apple and chive. The combination is unprecedented and probably unthinkably wonderful.

Sous vide then roasted chicken breast perfectly done with truffles potato purée and teriyaki sauce. It’s simple relative to the dishes at Akira Back and I may not be too surprise if I return for this.

This is inspired by the rhythmic drumming of the Korean janggu (a 2-sided hourglass-shaped drum).

It features a blend of The Botanist Islay dry gin, Honjozo sake, Noilly Prat sweet vermouth, lemon juice, yuzu juice, egg white, and a shiso leaf garnish.

Refreshing and bright, this has a calming herbal sweet earthy boozy flavour. Nicely thirst-quenching and aptly peaceful.
