Nestled in the heart of town (Orchard Road), @almabyjuanamador is a 1-Michelin-starred restaurant for 4 consecutive years since 2016. Helmed by 🇸🇬 Executive Chef Haikal Johari, Alma offers great value (3, 4 or 5 course) set lunches starting from only SGD65++. Go BIG or go HOME of course, we had their 5 Course Set Lunch, which sets us back SGD98++ per pax.

Main Course:
👉DUROC SPANISH PORK (Add SGD16)
Gobo | Pine Nut | Japanese Whisky Glaze
📝Well-executed by the chef, the pork meat was tasty and fall-off-the-bone tender. Not in a bad way, the flavour sorta reminded me of a zhng-up version of Bak Kwa. And of course to give an elevated level of complexity, their Korean ginseng mousse at the side was the MVP.

Zucchini | Chorizo | Crab Reduction
📝Unfortunately, this fell short of my expectations as the barramundi didn’t have that shatteringly crisp skin. Flavour-wise, it didn’t stand out for me too.

📝Pretty impressed by the harmonious mix of textures and flavours.

📝So glad that their apple compote was not overly sweet and packed with goodness.

Pecorino | Winter Truffles | Onion
📝Did you know broccolini was developed as a hybrid of broccoli and Chinese broccoli (Kai Lan) in 🇯🇵? The creamy green soup screams “BROCCOLI”, while at the same time whispering truffle notes. Topped with caramelised onion, buffala cream, pecorino and deep fried broccolini, am I supposed to dip the brioche bread stick into the soup?

Angel Hair Pasta | Hijiki Seaweed | Broccoli
📝It’s a run-of-the-mill dish but well-executed by the chefs. I wished there was at least another chunk of juicy lobster meat...

2nd Course:

Cream Caramel | ‘Cata’ Coffee Beans | Parsley
📝Jam-packed with flavour, but that one and only truffle shaving on top didn’t seem to offer any complementary earthy notes.

👉DUNGENESS CRAB
Kaboucha (🇯🇵Pumpkin) | Mikan (🇯🇵Orange) | Arbequina Olive Oil
📝Pretty impressed with how each component was nicely balanced without interrupting each other.

📝Honestly, I didn’t expect this to be so good. Served on a bed of toasted coffee beans, the warm crusty buns were fluffy and complemented perfectly with their ‘zenged’ butter.

For the dinner menu now, the restaurant is showcasing a 4-course ($148++) and 5-course ($168++) degustation menu that includes a trio of Chef Haikal’s Alma snacks. Either course you take, you will embark on a multi-sensory tasting menu of several courses of dishes in a single dining sitting like paying homage to our iconic kaya butter toast with the Foie Gras one-biter snack that is constructed with smoked eel, grape and coffee before moving along to the Salt baked celeriac topped with wakame seaweed, grape and French parsley and Jerusalem artichoke served with Australian winter truffle for that added luxury. For my main, I opted for the Hungarian goose that has been aged for 7 days, served alongside Kaboucha, burdock root and the sauce from the pan. As we approached the end of the meal, we were given not four, but the Alma’s Petit “ห้า”, a five bite-sized platter of a sweet ending.

This is the first time I am trying this traditional dessert that originated in the Northern Basque region of France, baked by @junkai123 of @almabyjuanamador, and it’s best paired with a bottle of French sweet wine of Château Jany Sauternes. The fruitiness from the wine goes perfectly well with the buttery crust and filling of pastry cream, that contains Tahitian vanilla bean, Moissac cherries and a touch of dark rum, of the Gâteau Basque. The pairing is currently available for takeaway and delivery, retailing at $98 or you can get the ala carte option of the Gâteau Basque at $39.
