For the dinner menu now, the restaurant is showcasing a 4-course ($148++) and 5-course ($168++) degustation menu that includes a trio of Chef Haikal’s Alma snacks. Either course you take, you will embark on a multi-sensory tasting menu of several courses of dishes in a single dining sitting like paying homage to our iconic kaya butter toast with the Foie Gras one-biter snack that is constructed with smoked eel, grape and coffee before moving along to the Salt baked celeriac topped with wakame seaweed, grape and French parsley and Jerusalem artichoke served with Australian winter truffle for that added luxury. For my main, I opted for the Hungarian goose that has been aged for 7 days, served alongside Kaboucha, burdock root and the sauce from the pan. As we approached the end of the meal, we were given not four, but the Alma’s Petit “ห้า”, a five bite-sized platter of a sweet ending.

This is the first time I am trying this traditional dessert that originated in the Northern Basque region of France, baked by @junkai123 of @almabyjuanamador, and it’s best paired with a bottle of French sweet wine of Château Jany Sauternes. The fruitiness from the wine goes perfectly well with the buttery crust and filling of pastry cream, that contains Tahitian vanilla bean, Moissac cherries and a touch of dark rum, of the Gâteau Basque. The pairing is currently available for takeaway and delivery, retailing at $98 or you can get the ala carte option of the Gâteau Basque at $39.

Alma is reopening for dine in! Time to revisit again, and I was told they're keeping their pre-CB menu a little longer.

I love how their dishes are always very well-rounded. For a vegetarian dish this refreshing, it came with umami undertones and crunchy textures. That's due to layer of celeriac chip beneath the beautiful garnish of white Pentas and Brassica flowers. That chip is made with celaraic and wakame, hijiki and braised konbu in yuzu juice. This is accompanied by crème fraiche ice cream, with freshness and acidity from clarified apple juice.

The main star here is the celeraic in the first layer, crusted with salt and baked until it forms a light caramelisation in its own jus. It was then finished with celeriac purée, chives and lemon, and celeriac biscuits made from its own roots for that added crunch.

This dish is also available for their lunch menu, with a supplement of $9++ if this dish is chosen from the list of options.

Upon seeing that the restaurant has launched a Basque Cheesecake ($49, 4.5 inch) in their menu, we knew we had to get one. Once you have gotten your hands on the burnt cheesecake, it is highly recommended for you to put it into the chiller as soon as possible and only consume it around 1-2 hours later. The Alma’s version of burnt cheesecake has a slight char on the top which gives it a slight bittersweet flavour while balancing it beautifully with the light and creamy cheese filling. I have not tasted many burnt cheesecakes in my lifetime, but this is definitely one that I can keep eating. As the basque cheesecake is only available for a limited-time only, do pre-order it soon because it is no longer in the menu.

Its audacious flavour is the reason I‘d be tempted to have this Organic Chicken Burger again. I thought the one-two punch of spicy “larb” (a Thai style of minced meat with fresh herbs) and sriracha mayo on the thick piece of fried chicken was brilliant. However, I did find the housemade buns, the one at the bottom to be specific, too mushy from the weight of the fillings coupled with the condensation that formed as the food cooled enroute to me. Anyway, I have shared this with @tayyongchuen who had DM-ed me to ask for my feedback. I also suggested to him that perhaps a slightly sturdier bun will do the trick because in all seriousness, everything else about this #burger is brilliant.
The other thing I appreciate is how they try to ensure it is a compact but complete meal by packing the burger in a cardboard box with a salad of butterhead lettuce, tomatoes and onions, a pile of chips and a small square of chocolate brownie for dessert (total price: $29). What’s more, if you place an order for any of their burgers or sandwich sets between 3pm and 5pm (valid till end April 2020), you enjoy a FREE bottle of Heineken beer.

One-Michelin starred Alma at Goodwood Park Hotel has started its takeaway service last Thursday, at very affordable price of about $20+ per pax.

My favourite? Angus Beef Burger and Iberian Pork Jowl! The beef burger uses Angus beef mixed with wagyu fats, so it has the best of both worlds - the beefyness of Angus and the buttery fats of wagyu. The Iberian was binchotan grilled, tender, juicy, smoky, and served with butter rice that reminds me of our local chicken rice. All these are only $29.

The wines are also going for 25% off, including many premium labels exclusive to Alma.
