Curious name aside, this popular stall has been serving way before 2008, and still draws a perpetual queue of up to 30 minutes during lunch.
.
Regulars speak highly of the delicate soup, whose flavour is derived from stewing mackerel fish bones for hours, a light sweet savoury broth that is gentle yet tasty.
.
The rice porridge is soft with grainy sweet notes, while the medium slices of deboned mackerel fish are fresh and tender with natural sweet savoury flavour.
.
Garnishes of lettuce, garland chrysanthemum, seaweed, tomato, bitter gourd, and coriander, lend crisp juicy soft textures and vegetal earthy herbal bitter sweet notes combined.
.
Accompanied by a traditional fermented soy bean and chili dipping sauce, which lends a punchy grainy salty spicy kick.

I have been wanting to try the fish soup here for the longest time (partly due to their interesting name), and i wasn't left disappointed during my recent visit. The soup was light yet flavourful while the fish slices were fresh and quite thick. An affordable & comforting option in the area if you’re looking for something lighter on the palate.

(P.S. I still don’t know why they are called Angel Horse, perhaps i should ask the stall owners next time)

When I first entered Albert Hawker Centre, I spotted an extremely long queue and decided to join it without even knowing what I was queuing for. I peaked at the menu and was glad that they sold Fish soup. I ordered the $5 portion of the Sliced Fish Thick Beehoon Soup and it came in a really big bowl! When I took the first bite, I found the dish quite plain and didn't understand why there was such a long queue. My dad explained that they were famous for their fish soup and I decided to drink the soup. The soup was absolutely delicious and changed my whole impression of the stall, the chili given complements the dish perfectly. My dad shared that the stall has been around for ages and that the old auntie that he knew of, was not around anymore(he used to frequent the stall very often). He also said they made the soup out of salted fish and pounded fish bones which explains the amazing flavorful taste, which was not at all plain. My mum also told me that I should've ordered it with rice which everyone else who was in the queue did. I found that $5 was an acceptable price for a large bowl of soup.

[Albert Complex Market & Food Centre] Another stall with a crazy long queue at Albert Complex Market & Food Centre is Angel Horse Teochew Fish Soup. Just like 百年, I was literally scratching my head as to the rationale behind the "Angel Horse" name. The Sliced Fish Soup ($5) was delightfully light and "clean" while the fish slices were thick and tender, just the type that I love. No frills, no theatrics, just a simple and humble bowl of healthy sliced fish soup that is suitable for all ages. #hawkerpedia
