The star are the thick cut strips of kangaroo loin meat, seasoned with black pepper, tender and moist with a firm chew to texure, and bursting with meaty savoury salty flavour. Much less gamey than beef, but also less juicy.

The dense chunky mashed sweet potato lends lovely vegetal sweet notes, while the fresh crisp rocket leaves / arugula have a vegetal bitter herbal flavour.

Tucked within is a vibrant mound of beetroot relish, juicy and vegetal sweet sour, staining everything it touches. Completed with a rich black pepper gravy with sharp spice notes, and several dollops of creamy garlic aioli which lends a herbal sweet spice note.
