It's rlly intense but I didn't like it cos it has a cough syrup taste
Still chewy, less fatty, but with a deeper beef flavour.
I feel like for those who prefer less chewiness, medium is the way to go rather than medium rare, the extra rendering of the fat produces a better char and more intense flavour as well
So they have this system where they put the per 100g price beside for you to easier compare
This Michelin 1 star place ages their steak, and you can taste the depth of flavour. Despite the extremely fatty cut, the beef has quite a bit of chew. It's not the same as the lousy beef that has no marbling, and it's something I can see people enjoying, but it's not rlly for me. Nonetheless I have to admit overall it's delicious
Special mention to the onion, no idea what's the soy based sauce but it was absolutely stunning.
Their doenjang taste quite diff from normal, it's not as salty and there's a much stronger bean taste. However it's very strong and so just a small dab should suffice for each piece of meat
What's nice is they cook it for you perfectly and tell you to enjoy this bite with wtv, much like omakase
