This beautiful stack of malted pancakes, blueberry and maple compote, whipped vanilla and mascarpone cream is an utter joy to tuck into. Fluffy as hell, like the most tender-crumbed cake with a just little chew to it, the pancakes themselves won me right over. Then you’ve got that chunky blueberry compote of plump, juicy, whole blueberries, that actually tastes like the real damn berries and not some cheapass purée. And don’t even get me started on the mascarpone cream: exceedingly creamy, slightly tangy, rich yet paradoxically light 🥰🤤💕 I would’ve liked the malt to come across stronger — I honestly couldn’t taste it — but with all the amazing components here, this girl ain’t complaining.

Nostalgia is one powerful emotion to appeal to, but works only when used wisely.

Brotherbird were known to have closed for one entire year in light of the pandemic last year. Some people, including myself, were worried about the future of their store.

It seems like they’ve taken a step back to reflect on the operations before they put a cap on it in April 2020, evaluated what worked and what didn’t, and came back stronger.

Before they closed, they did away with the Mochi Donuts with Softserve, a mainstay that was a crowd magnet, whether you were a regular or an acquaintance. They traded it with some honey toasts and gelati, which felt like a step forward too fast.

This time, they brought it back to what worked for them and even paired it with 2 other variations (ie waffles with softserve & fried croissants with softserve). Let’s get one thing straight though - there was nothing inherently wrong with what they did last year.

Yet, many can admit that that, in contrast to this, pointed to a pace of the brand’s evolution that was easier for the crowd to follow and appreciate.

They still kept some of the new, which can be found among their savoury mains. They had found the perfect balance of bringing in the new and retaining the classic, which teems with nostalgia.

I’ve been back twice now, and it’s full house on both occasions. A lot of items are sold out with 2 hours to go to closing time. It’s as though they never left or closed shop.

They’re one of the few examples of F&B establishments that have tapped on the concept of nostalgia perfectly. All I can say at this point is: I’m happy they’re back.

Fried croissant coated in cinnamon sugar, sitting on a bed of raspberry coulis, served with Brotherbird’s signature cookie butter softserve, some diced strawberries and granola. Boy was this an utter joy to devour. Let’s start off with the fried croissant: what an absolute stroke of genius! Their take on churros I’d think sees their widely sought after croissants fried to a beautiful crisp, its inner layers becoming a hot, greasy mess that’s as sinful as it is delicious. Put that with their tasty af cookie butter softserve (best biscoff-flavoured frozen treat I’ve tasted btw), tangy coulis, and sweet vibrant strawberries, and you’ve got yourself a fabulously well-composed dessert. Granted, there’s still room for improvement here. I’d much have preferred the cinnamon sugar topping to be coarser, much like the good ol’ classic churros, and for the croissant to be a touch less greasy. But hey, it’s their third day of ops since they reopened their cafe after a year’s break; so I’m not complaining. It’s innovative without being over-the-top cray cray, exciting while still comforting.

Signature Mochi Donut - Made with glutinous rice flour for that ideal chewy texture, it is glazed with a salted caramel sauce and lavished with a sprinkling of almond crunch in the centre.

With beans from 2 degrees north, Brotherbird Coffeehouse pours a chocolate-y base coffee ending with sweet toffee notes with a slight nuttiness.

The flavours are more prominent as a milk-based 5.5oz white, while the nuttiness is more prominent in the black.

Along with the coffee, do have a go at their selection of croissants or desserts!

Alternatively, go for their Croque Madame ($18) which comes with thick slices of brioche toast, filled with smoked ham, Roma tomatoes, bechamel, gryere & topped with a perfect sunny egg with the side salad & roasted garlic tomato.

If you've enough stomach, remember to get your hands on the all time fav - soft serve with mochi donuts, or their croissants! 🥐
