This oven roasted pork knuckles are from grain fed pork, marinated with proprietary spice mix and infused with beer.

The skin was light and crackling, and you could already hear that when you cut this through. Dip the flesh in mustard or any of the 3 condiments provided, have some sauerkraut in between, and a beer to go along. Everyday could be a weekend like this.

Experience Christmas the traditional way the Germans would. This photo shows Chef Wolfgang Ranner infusing red wine with cinnamon and orange, and this is created using his favour recipe, “My recipe combines all my favourite things – red wine, Christmas spice and citrus fruit flavours. The mulled wine ijs a very special tradition in German Christmas markets and it’s an experience like no other.”

I've always love their pork knuckles. What you're seeing now is Chef Wolfgang showing us how to magically remove the bone from the pork knuckles, leaving you only the glorious skin and meat. It was oven roasted from grain fed pork, then marinated with proprietary spice mix and infused with beer. The result is succulent tender meat beneath that crackling golden brown skin, and you could already hear that when you're cutting this through.

As we end our meal with traditional German desserts and a glass of warm mulled wine.

Christmas Dessert Medley ($29) is made up of toasty apple strudel drizzled with warm vanilla sauce, chocolate cake, and gingerbread-infused creme brûlée. Relishing the devilish lava chocolate cake so much so that I can finish one on own. While cinnamon lover might enjoy the creamy decadent creme brulee!

It was also an eye-opening experience watching Chef Wolfgang Ranner prepare the muller wine Glühwein ($12/glass). Combining red wine, Christmas spice and more, it's sweet and has a fruitier flavour as sugar and citrus fruit are added while creating the drink.

Christmas is here. I was at Brotzeit last evening, and they've already started serving their new Christmas menu. They even have pushcarts designed just like the stalls in the Christmas markets to offer the German Christmas market experience, and you can actually buy festive products from there.

I've pictured Rachel @foodgemsg drizzling warm vanilla sauce over an apple strudel. But what's also very interesting in this platter of traditional German desserts is the crème brûlée right in front, because that is infused with the taste of gingerbread. There's also warm chocolate lava cake, orange cream and cinnamon star cookies.

The thin shank of grain-fed pork is cooked till the meat is tender, then oven-roasted for the perfect crackling skin.
Their secret is they infuse the meat with beer, and massage the meat with their proprietary spice mix.

Slow braised veal shank, incredibly tender, pulls easily away from the bone.

A spice rub gives it a tangy savoury flavour, bold and meaty with good depth.

Love the truffle infused mash and the soft red wine cabbage too.

Brotzeit has introduced this traditional German festive beverage as part of their Christmas 2016 menu.

The warm, sweet spice notes, from a blend of red wine, cloves, cinnamon, orange juice, and white sugar; is lovely and comforting.

10 types of sausages to celebrate Brotzeit's 10th anniversary. That's 1.5kg of meat slapped on a platter for just $68++. Menu says it feeds 4-6 pax, but bring at least 5 bellies to tackle this! Plus enjoy Brotzeit's Kellerbier for just $10++ per glass with any order. Still in a food coma!
