Some of you like your seabass nicely cooked skin-down, delicately plated with creamy sauces and quenelles of whatevs; some like it gently steamed with aromatics and soy sauce; but when I think of a good seabass, @camp_kilo’s beautifully grilled one is what comes to mind. Armed with the basic salt and pepper, wedges of lime, and an insane mastery over fire, Camp Kilo’s no-fuss take means you really get to taste that lovely sweet, fresh fish. There’re no fancy sauces to detract you from the fish (they do have a few fantastic housemade sauces on the side if you really want em), which means they’ve got no way to hide any mistakes like bad produce or overcooked fish. That I get perfectly succulent, moist and tender fish every time speaks tons.
An outdoor restaurant concept that soak you with the camping lifestyle experience with all the roasted food and of course beer pong. It is better to go with a large clique (6pax and above) for it's full rack of roasted pork ribs ($30) 🙌🏻
Also, the sambal stingray is so good to die for! It is 500g and cost only $25.00 and it's the thick type, so different from any place like chomp chomp.

Unique dishes served in Kilo, surrounded with rustic environment and a good view. The dishes we decided to order was the . It was a dish that consisted of roasted pork, which was fantastically done, where the pork meat slowly melts in your mouth without you chewing too much, tom yum beans, kale chips and chorizo and poached egg. This dish was fantastic, the mixture of the meat, and the sauce of the beans created a rainbow of flavour in your mouth, really enjoyed the unique concept of their dishes, will definitely be back to try their other dishes.

This is the roasted whole pig from Camp Kilo Charcoal Club in Singapore! Open only on weekends, Camp Kilo features mainly BBQ meats/seafood on charcoal with their main specialty being the whole roasted pig. And only one is roasted each day! (Available after 5.30pm)

The clincher for this awesome SIO BAK was the sound of the crispy skin cracking under pressure and then the sensation of the meat melting in your mouth. And before you judge...it was as lean as it can be (but how can you have too lean a SIO BAK?...sacrilegious). It makes the walk from the MRT stations super worthwhile. It's like having a BBQ at your buddy's place. Totally chilled out, this backyard joint is a great place to get your bbq ribs, pork belly and roast chicken on! And they have some interesting sides too, not your usual BBQ-ed bean but Tom Yum beans instead. Yum!

Farewell to salted egg yolk and hello to honey butter!
The cornbread was fluffy in the inside and crumbly on the outside BUT THE HONEY BUTTER. It was sweet and salty at the same time, perplexing my tastebuds. I just wanted more and more to pinpoint the taste but sadly I had run out. I wish I had more though!

To negate the scrumptious sinfulness of @camp_kilo's ribs, I opted for the seemingly healthier Burnt Carrots (price TBC) for my sides. It could pass off as a salad right? Right?
At most times I hate carrots, but this time was definitely an exception. The carrots were slightly charred on one side yet still having that lovely raw-like crunch to them. On top were dollops of Chef @nickolinik's homemade cottage cheese and sate sauce that would make his mum proud. Together with some gorgeous plums and fried garlic, this ensemble could pass off as a main course altogether.
I certainly hope this dish remains on the menu!

Had a little sneak preview of @kilokitchen's new concept - Camp Kilo Charcoal Club (@camp_kilo) this weekend.
In the preview, I got a taste of their succulent Pork Ribs (price TBC). These tender ribs were a confit of the pork's own lard. The ribs were then grilled in their signature Kilo chipotle BBQ sauce, which resulted in a lip-and-finger smacking rack of ribs.
Besides ribs, they also offered pig head terrine and roast pig. I guess I've got no choice but to head back when it opens!
