my dad was OBSESSED with how thin and crispy the tortilla chips were😂 first time finding nachos not surfeiting!

BIRRIA BEEF QUESADILLAS ($18) had generous amounts of shredded short rib & brisket. v flavourful and juicy too!!

BARBACOA LAMB TACOS ($14 - 2pc)
one of the rare times i like lamb!!! so friggin yummy

i didn’t expect myself to enjoy mexican food so much but I DID!!!! đŸ„șđŸ„ș

we got:
- loaded nachos: i’m not even much of an avocado fan but i ate EVERY MORSEL of that guacamole because it paired so well with the nachos
 shoutout to the tomato salsa & chicken as well! so good
- fish tacos: damnnn i would never have thought of getting fish tacos purely off a menu, only got it because so many tiktok reviews were raving about it and it definitely did not disappoint. the fried fish was so tantalising & the sauce definitely packed a sweet-sour-spicy punch
- pork quesadillas: also delicious but least memorable of all we got!

Loved my order of Birria Beef Taco ($20). Beefy, cheesy, oh-so-juicy and a tinge tangy-sweet with the salsa. Generously filled with well-seasoned meat and melted mozzarella, the charcoal tortillas (said to be prepared fresh daily) were pretty nifty to pick up as well - holding the moist filling nicely and providing tender-chewy bites though tbh I still made quite a mess. The lamb consomme served on the side was delightfully umami too, giving the comforting meat flavours a boost.

one of the best meals i’ve had this year fr
 2nd time at huevos and it was really money well spent even tho i went out of my budget LOL.

i started off with the fish tacos and omfg they were PERFECTLY fried, every bite was crispy and crunchy. i was worried that the fish wouldn’t be very flavourful compared to the beef but i was pleasantly surprised because the fish was actually a good balance of flavours, between the idk what sauce they used and the fried fish. there were a few strands of purple cabbage which i gladly slurped up (as an anti vege eater) bc this taco was soooo good

then i went onto the birria beef tacos which was what i had been craving and omg i really was NOT disappointed. last time i stole a bite of my friend’s birria tacos and it left me craving for more since then 💔 and every bite of the tacos was truuuly soooo sinful but i don’t regret any calorie đŸ”„ the shredded beef was packed with so much flavour. the extra sauce? gravy? thing they provided boosted the flavours of these so much more, so BE SURE TO DIP IT IN THE SAUCE

our horchata came first actually and i was again pleasantly surprised! this was my first time having horchata but it felt like i had tasted this somewhere before?? actually not sure sia but it was a good refresher after the greasy (in a good way!) tacos.

overall am DEFINITELY revisiting huevos soon‌ last time i had the birria beef burrito bowl (lol alliteration) and as someone who gets full quite easily i regretted getting it bc it was really a lot a lot for me. so this time i can confidently say tacos are the way to go (for me at least)! will try the loaded nachos/quesadillas maybe?

also we got a seat with not the best ventilation so we were both sweating quite a lot, esp after the walk to huevos alone 😭 but there are seats with good aircon + a 2nd storey so if you can try to go at a less crowded timing to get good aircon LOL

This is a half Hokkaido sweet corn, with chiotle aioli and cotija cheese. You can also get the full corn ribs for $12. I liked the how the use of chives and cheese brought out good flavour, although $6 for half a corn cob is :')

NGL I feel like I'd have loved the other dishes more but that's probably for next time when I revisit! Would reco going with a group of friends so you can share more variety đŸ€­. Also, it'd be best to reserve although we were lucky to snag seats via walk-in on a random Thursday at about 715pm!

Tbh I'd be more of a fan of pulled pork than these grilled pork pieces in a quesadilla, as some parts of the pork were a little chewy due to different parts of the pig used. Overall still flavourful tho!

Honestly many raved about their food so I got to give it to try to find out exactly how great it was!

🌟 Baja Fish Tacos ($12+)
Their tacos come in sets of 2 and 3, and this is definitely a must try if you're here! The spiced breaded fish was really crispy yet not greasy, and quite enjoyed the flavours, which were Mango salsa & Chipotle aioli. The tacos here are soft though, so it depends on whether you personally prefer soft or crispy ones!

Fans of Mexican food shouldn't be strangers to @huevossg and its fantastic array of Mexican fares. As someone who heard many good reviews about this cozy eatery, we were really excited to have finally tried it!

Top dish of the night has to be their Baja Fish Tacos - fish was fresh with almost zero traces of fishiness; paired with a deliciously crisp and light yet flavourful batter. Definitely a MUST ORDER when you're here! Do also give their cocktails and the traditional Mexican drink, Horchata a try.

All in all, @huevossg exceeded our expectations in the dishes we've tried. One small tip will be to make your reservations (Tues-Thurs) before going down otherwise be prepared to queue since it's almost always a full house.

At ten bucks a pair (before additional GST & service charge), @huevossg Al Pastor pork tacos are incredibly good value for incredibly tasty tacos. Wheat tortillas pocketing shaved slices of pork grilled on a rotisserie are dressed with chipotle aioli and garnished with pineapple chunks, diced onions and cilantro (ew).⠀

The pork has been blessed with the essence of the marinade, and the dried Mexican chilies, spices like cumin & oregano add pizzazz to the saltiness of the pork. The pork is quite lean, but there’s some fat hidden within that smoky, savoury pile of pork. The pineapples add a sour, zesty & crunchy contrast to the soft & savoury pork and the toasted tortilla, restraining these Al Pastor tacos from becoming monotonous. The chipotle aioli was subtly spicy & addictively rich, but there was a dire lack of it in the taco.⠀

Unfortunately, I made a terrible mistake. In my excitement at finally getting my hands around birria tacos, I left these Al Pastors to the end. Don’t get me wrong, these Al Pastor pork tacos are quite sumptuous, but I had been absolutely blown away by the birria tacos, and there wasn’t much left of me to blow away after that. Learn from my mistake fellas, enjoy the Al Pastor first, and then get your culinary world rocked by those breathtaking birria tacos.

Even though @huevossg is an astonishingly tiny Mexican restaurant along North Bridge Road, it’s the perfect place for terrific tacos on #tacotuesday. The taco list at Huevos is impressively extensive, numbering eleven taco options in total. Due to seeing Guga repeatedly whipping up birria tacos on YouTube, and the rarity of said tacos in Singapore, I instinctively selected a pair of them for $13++.⠀

Not gonna lie, I really wish I’d gotten a trio for $17++ instead. These wheat tortillas were filled with a mix of shredded stewed beef brisket & short ribs, cheese & pico de gallo, and they nothing short of totally transcendent. Even though the brisket & short ribs weren’t gonna win an award for ‘most tender meat’, they made up for that with spades of flavour & fat within. The beef had assimilated the delectable qualities from the stock it had been simmered in, and I could taste spicy peppers, oregano and cumin alongside the savouriness of the stock used.⠀

The beef doesn’t just go into the tortillas simply like that, oh no. The fat rendered from the birria stew is used to fry the tortillas, which are loaded up with the tantalising beef & a judicious amount of shredded cheese, then quickly folded over to create these tremendous tacos. The tortillas are delightfully crunchy, giving way to the softness of the sapid beef inside, and all these fragments are held together by the sexy, stretchy melted cheese.⠀

The birria tacos already plenty tasty on its own, but you ain’t doing birria right if you ain’t dipping your tacos into the beef consommĂ©. The consommĂ© adds extra salty & beefy deliciousness to the already flavourful tacos, and an extra layer of heat from the spices within.⠀

These breathtaking birria tacos changed my life for just thirteen bucks a pair, and I DO wanna taco ‘bout it.
