Châteraisé (Causeway Point)

Apple Mousse, Apple in Syrup, Sponge, Apple Purée, Almond Cookie Crunch, Almond Tart. Spotted this cake available at the cake display and decided to go straight for it. Replicating the look of an apple, the flavours were all pretty on point — having various textures of apple, the cake was aptly sweet with its fruity flavour, while the mousse layer attempts to balance the flavours without cancelling everything else with its light notes of apple sweetness. Topped all above an almond tart with almond cookie crunch on the side, the almond frangipane carries a fragrant, nutty note to provide some crunch and contrast to the other apple-based components in the cake.
