Founder Tan Chee Hoe still mans the stall as he's done for over 50 years, though he now frys perched on a high stool, and son Tan Peng Lian has since stepped up to co-run the outlet.

Their rendition veers towards the 'wet' style, with a robust prawn and pork stock infused into the wok hei / breath of the wok laden noodles. Soft and slippery with bold smoky savoury salty sweet flavour.

Crisp bits of pork lard lend punchy savoury salty notes, while the bits of egg are sometimes fluffy, sometimes crisp, with eggy sweet savoury flavour.

The deshelled prawns have a medium crunch, and the squid is bouncy slippery, both carrying sweet savoury flavour.

Drizzle of lime juice and a dollop of bright chili enhance with zesty sour tangy spicy flavour.

I used to prefer Ah Hock (red plate) over this stall when choosing fried hokkien mee at Chomp Chomp Food Centre, but lately i’ve been more inclined towards Chia Keng.

The style here is the sticky wet kind, with a flavourful wok hei taste in the noodles. With fresh prawns and super shiok sambal chilli as well, this beats Ah Hock for me.

Fried in a sticky slick sauce, although we noticed the uncle re-frying our plate from a previous batch of noodles, it didn't really affect the quality we got. It was slightly wet with distinct wok hei and pronounced prawn-y flavours. Definitely not the best around but works if you're here and craving for one. #BurppleBestofSerangoonGarden

I was craving some good ol' Hokkien mee so I went down to Chomp Chomp.

While scouring for seats, I noticed that there were many unfinished red plates of Hokkien mee (from the famous Ah Hock stall). A bit troubled, I decided to go for its lesser known-green plate counterpart, Chia Keng (S$3/4/5).

Totally no regrets! I loved the consistency throughout the sauce and noodles. It was a bit wet but still had that charred flavour. The prawns were fresh even at night. The chili was so damn super Shiok and the lard was crisply delicious (duh!)

My party actually ordered a second $5 plate amongst other things because it was so good. However, the second one didn't taste as amazing as the first plate. Law of marginal diminishing returns? Or just inconsistency?

For me, the determining factors would be the wetness and colour of the finished product. Fortunately, Chia Keng Fried Hokkien Prawn Noodle is able to satisfy my craving though it's not the best that I've eaten. With three different price points ($3.50/$4/$5) with a slightly long wait, you will get a decent amount of noodles to seafood ratio plus a scoop of crispy pork lard. The chili might be too intense for some though so be cautious into making everything in.
