Gorgeously brown and gamey, beautifully roasted with crunchy yet tender green peas, crisp bacon bits, sweet turnips and a wonderfully rich and smooth sauce after that cognac flambé. I hate peas with a vengence, but this gem here had me changing my mind. Coming back for the set dinner!

Deep fried pig ears. It is not every one's thing but it is totally mine! Crispy outside with the chewy gelatine collagen bits within, paired with a lovely red vinegar dip! Yummy!
