Having enjoyed this eatery’s famous Moonlight Hor Fun on a previous visit, I wanted to try something else for our meal-closing noodles, which is how the Fried Mee Sua ended up on our table.
Light and a little fluffy, the strands of noodles were suffused with “wok hei” and a rich flavour. Obviously, whatever stock Chef Wayne splashes on during the cooking process was of a superior kind. The amount of “liao” (ingredients: prawns, pork, squid and egg) thrown in was also impressive. It hit the ideal noodle-to-“liao” ratio for me, which means I never had a bite where it was mee sua and mee sua only.

Back at its home base, the crowd will stream in nonstop especially during peak hours and the must-order is their Moonlight Hor Fun ($6). Think wok hei filled kway teow that’s stir fried with seafood and served with a raw egg in the middle for diners to mix in before feasting. The addition of the egg gives it a creamy finish and it makes slurping an even more enjoyable action.

Book a table in advance at this popular Bukit Merah zi char spot that is great for celebrations with friends. Get their signature Moonlight Hor Fun (from $7) that sees flat rice noodles fried with squid and lap cheong, and topped with a fresh raw egg yolk begging to be mixed in. Also good is their Salted Egg Crab ($60) with delicious gravy that you'll want to mop up with their Steamed Man Tou ($6 for 6 pieces). Complete your meal with the Mingzhu Roll ($2 per roll) and the Coffee Pork Ribs ($8). Since it's a celebration, bring your own wine (corkage at $5 per bottle!) to pair with the food!

I had been to this Zi Char place a couple of times and felt that this place is really worth a mention.

One of the signature dishes is the moonlight Hor Fun. Stir in the egg yolk to have a silky smooth hor fun filled with Wok Hei. Arguably one of the best hor fun in Singapore. I will always order this dish when I am here.

Signature Moonlight Hor Fun aka Wat-Dan Hor. See the raw egg yolks that resembles reflection of the moonlight on a river, pretty as named, absolutely delish!
Claypot Pig's Liver (no picture). It is damn good! I honestly don't take pig's liver because of its powdery after taste but this dish, has totally changed my perspective. (Can't take pig's liver anywhere else)
Salted Egg Calamari (no picture). Not like your usual, saucy salted egg dishes. This place serve it, crispy salted egg coated calamaris. Mind-blown! It was a tad bit saltish, other than that, all is heavenly!
Coffee Pork Ribs (no picture). Well-tenderised pork ribs with faint coffee aroma. Very nicely done!
Farewell dinner done right with just a bit of a heart attack 🤭. Goodbyes aren't forever, like farewells aren't always sad. All the best for your future endeavours, Hayato-san!
