The remaining sweet Choux available at Angela May Food Chapters. Again, all the Choux are delightfully crusty like the very first time I had them. Pretty much alike the Morello Cherry Choux, the Raspberry Champagne is also on the lighter side with just a short hint of alcohol with slightly tart berries. Dark Chocolate Cream is topped off not with meringue, but torches marshmallow cream that allows it to retain the shape and texture; a pretty smart move that also helps add a little eggy sweetness into the Choux. Citrus was one of my new-found favourites alongside the Dulce Caramel; a good balance of sweet and sour that doesn't attempt to kill your tastebuds, but still immensely refreshing.
