[Telok Ayer] Combining my love for booze and ramen, the @saucy.sg x @jimotoyasg Yamzaki Ebi Miso Ramen ($28) hits all the right notes. Piping hot, aromatic prawn broth balanced nicely with the subtle heat and smokey finish from a shot of Ebi oil-infused whisky- it’s a Ramen that’s hard to beat.
Their regular Ebi Shoyu Ramen ($17)-think prawn noodles on steroids, had a stronger, more intense flavour and I felt that its saltiness emphasised the umami and sweetness of the amaebi and pork broth more so than the Ebi Shio Ramen ($17) which had a lighter taste, but with the prawn flavour still prominent nonetheless. The addition of cabbage provided texture and sweetness, but the small bits of minced pork didn’t do much for me. Who needs Lobster ramen when you have Ebi ramen this good?

ACAMASTIPS & GTK💮: The complexity that Jimoto-Ya gets out of their shrimp shio ramen is pretty amazing. Shio, which means flavoured with salt not soy sauce. The addition of Tonkotsu makes the full bodied broth even richer and tastier.
Their bowls of ramen are inarguably delicious that's richly packed with Umami, the only drawback is that it might get a little too one dimensional after that.
The layer of shrimp fat on top of that bowl of ramen is one of the most delicious shrimp essence eating experience. 🤤

Not all ramen joints does great shio, is like finding a partner that ticks all your requirements categories (rare but always treasured & appreciated) The flavour of the shio is the lightest of all the ramen Jimoto Ya offers & it's a good start to wet your palette before venturing into the richer broths. 🔖

No secret to a good bowl of ramen, what ever style or ingredients you favour, it has to be hot! The temperature of the broth has to at minimum sustained through as you devour the bowl of noodles. Jimoto has certainly got this spot on. I would recommend Shio for those who want to taste its original flavours. The broth is rich with umami of fresh sea shrimps and not thick, so you wouldn't get that gelak-ness. Your crave/missing for cha siu can be easily replaced by a side order of gyoza or corn croquette which are both nice accomplishment.

ACAMASEATS & GTK💮: Hands down still one of the best Shoyu ramen I've had so far. Complex, flavourful and has a deep intense Shoyu flavour with a richer Ebi & Tonkotsu broth as compared to their Ebi Shio Ramen. 🤤

The only outlet outside of Japan (at the moment) Jimoto Ya specialise in Amaebi based ramen with Amaebi (Shrimp) being flown in from Hokkaido. If you are into Prawn noodles & ramen, this is it. 🔖

Loved how this bowl of ramen gets the basics right. Ultra hot broth that stays hot for a long while and ajitama egg done so right. Ramen is chewy and goes really well with ebi flavoured broth. Includes healthy servings of cabbage. Quirky interesting space. Highly recommended! Thanks burpple community for finding this! (8/10)

This ramen is the bomb!!!!!! The soup has a very strong prawn flavor which is so addictive then I drank it to the final drop, and I don't always finish the soup of the ramen so this goes to prove how much I like this! The tori karaage is super crispy but still moist and tender on the inside, definitely hit all right spot! I've gotten the petite lunch set and it's just the right size for me. It comes with a dessert as well but nothing beats the ramen!

Ebi Shio Ramen ($16.50)

Japanese sweet prawn and pork bone broth ramen with salt seasoning @jimotayasg . Prawn based soups are my all time favourite! Loving that sweet umami broth. I preferred this shio to the shoyu version as I rather taste the soup broth unadulterated.

Those hankering after a comforting bowl of ramen should head to this ramen-ya in China Square Central (opposite Wang Dae Bak). Instead of the more commonly known pork broth, Jimoto Ya specialises in a unique pork and amaebi (sweet prawn) broth made from amaebi prawn heads. There are five items on the menu (from $16.50) including the crowd favourite Ebi Shio Ramen ($16.50). The flavourful yet light tasting broth is ladled over al dente noodles, crunchy cabbage, ajitama (marinated egg) and minced meat. Note that the restaurant swaps out cha shu for minced meat, claiming that cha shu doesn't go well with their soup base. For a hearty and satisfying meal, opt for the value-for-money sets that are available for both lunch and dinner. Each set ($19.50) comes with a ramen, a side (opt for the ebi tempura!) and complimentary tea.
