Like standard sashimi, these raw beef sushi has various cuts and topping varieties (think uni, truffle) that you can try if you’re feeling a bit adventurous. The texture of the meat is rather chewy and thick, but if you opt to aburi it slightly, it ends up taking on a bit more tenderness and texture.

Niku Kappo at ION Orchard offers authentic Japanese Kappo style cuisine, and focuses on beef and sake on its menu. Even though the restaurant specialises on different cuts of beef, there are also other dishes such as tendon bowls, sukiyaki, skewers and non-beef item. -

Nice, new-ish casual Japanese dining spot in Zion Orchard B3 that offers meat sushi. Totally novel in Singapore's food scene, but can't say it's better than the usual seafood ones. I had the $25.90 Niku Sushi Mori platter, which has an assortment of beef sushi (the best was the Wagyu Toro for the soft texture). The menu is also pretty extensive and has very reasonably priced items. The Mt Fuji hot pot ($18.90) was a huge portion of sliced beef and pork wrapped around a mound of vegetables (bok choy, bean sprouts and kangkong) simmering in a rich pork bone broth; would recommend! The sake menu here is also very impressive in the number of options they offer. #BurppleSushiMonth

To satisfy the meat lover in you, head to this beef-centric restaurant in the basement of ION Orchard. Niku Kappo serves a variety of beef dishes, including Sushi (from $5.90), Sashimi platters (from $23.90) and Hot Pots (from $18.90 per pax). The Niku Sushi Mori ($25.90) is a sushi platter that comes highly recommended by Tastemaker Ice Blossom. Start with the more subtle chicken breast sushi, and end with the wagyu toro sushi β€” Ice Blossom describes it as "glossy and buttery beef fat" that is simply divine! For mains, share the signature Yaki Tetsu Edo Style (from $18.90 per pax for Australian beef, minimum two persons). The meats are lightly grilled on the iron pot before miso paste and dashi stock are added to the mix. The rest of the ingredients like tofu, greens and glass noodles are arranged nicely in the thickened sauce. Surprisingly, the brown glossy sauce is not too salty and doesn't leave you feeling parched. Don't call for the bill immediately when you're done with the dish β€” the staff will throw in a bowl of rice and beaten egg into the leftover sauce for a comforting bowl of rice and gravy, so save space for that!

Lunch time deals along Orchard Road are getting more and more attractive. Dining at the newly opened Niku Kappo, selected mains comes with free sides during lunch. (The sides varies depending on the items ordered.)

A warm rice bowl of stewed beef with onsen egg is the best comfort food on a rainy day for the ones with a carnivorous diet. Having tried Niku Kappo's wagyu toro sushi, this Gyu Don pales in comparison to the buttery and good cut of wagyu. Still, it was a decent and worth the value beef rice bowl in town. πŸ˜„

This is a plate of goodness that beef-lovers would devour with great pleasure. Start subtle and finish with a bang would be my choice of sequence for the sushi. I began with the simple chicken breast sushi, proceeded with beef maki, then wagyu tataki sushi and wagyu rump sushi. I saved the best for last - wagyu toro sushi! The glossy and buttery beef fat that coats this delicious cut was simply divine. 😍
