Succumb

9 Reviews

Besides getting the starters such as the recommended Har Cheong Pork Belly and mains with creative names like Hooked on Me (Hokkien Mee) and Succumb to Mee (Fried Clam Bee Hoon), the centre of the attention is undoubtedly the Green Chilli Crab which serves as the grand finale.
Gigantic in stature and stir fried over low fire with scallions, candlenuts, lemongrass and green chilli, this is a feast for both the eyes and the palate.
The thick, rich green paste is incredibly tasty and its flavour is infused in the fresh white meat below its shell.
You can also order mantou (fried bun) to dip into the paste.
Now I can understand what the hype is all about.

Also pleasantly pleased with this photo #ShotOniPhone using the iPhone 8 Plus, and minimally editted using only the iOS original photo app that came pre-installed with the phone. It's the new Studio Portrait mode that darkens most stuffs in the background.

Now about the noodles I enjoyed here. This vermicelli has quintessential wok-fried smokiness to it, soaked in crab broth that was also generous with lots of clams. Love that broth, which was simmered for more than 5 hours with flower crabs, peppercorns and lemongrass as well. It's very tasty comfort food, and i forsee myself ordering this during my office lunches.

The vermicelli is firstly wok-fried to bring out the distinctive charred flavour before being soaked in the homemade crab stock made from simmering flower crabs, peppercorns and lemongrass for hours. Next up, plump and briny clams are being added at the precise time so as not to overcook it before spring onions and ginger are added. The process of soaking the noodles in the broth is an important step to allow the vermicelli to absorb all the natural goodness which resulted in many slurp-worthy moments.

The taste of wok when I put the vermicelli noodles in my mouth and also the aroma of crab broth. 👌🏼😋👍🏼

Neighbours to Joo Bar along Tan Quee Lan Street, Holy Crab is the collaboration between private chef Elton Seah and the owner of Joo Bar. The space is small and portions are big, so make reservations in advance and come in a big group. The menu is kept to the bare minimum — one appetiser, three carbs, and shines the spotlight on what Chef Elton does best — gravy-ladened crabs. There are two types of crabs to choose from. Large groups (three or more) should consider sharing the Sri Lankan crabs, while duos may want to opt for the smaller Vietnam crabs. All crabs are brought in daily, charged based on weight ($8 per 100g) and you're allowed to split one large crab to be cooked with two different sauces at no extra charge. Of the six sauces including the signature chilli crab, go for the comforting 'succumb', which features crabs braised in a incredibly flavourful broth, fried with eggs, chives and topped on a bed of vermicelli — no need for an extra order of carbs! Share the Fried Baby Squid ($14) while waiting on your crabs.
Avg Price: $40 per person

Be prepared to succumb to this glorious plate of gravy-ladened dish! I always had my crabs fried with sauces, so having noodles included is a first for me.
