White Pepper Crab

No wonder this is a signature dish! Unlike the usual chilli crab or black pepper crab, this was full of Unami yet not too spicy. Must try!

You should get the smaller crabs which are usually sweeter, and the ones I got were surprisingly meaty too. I still much prefer that place with no signboard (hands down) but this is decent enough. ($56 for 2)

Signature white pepper crab flavour. They actually have quite limited flavours for crab (eg. white pepper, black pepper, ganxiang). They don’t offer the usual suspects like salted egg and butter. White pepper wasn’t as flavourful as i expected it to be, not spicy and just more salty...

The monsoon season in SG, while gloomy, presents itself a hidden blessing, crab spawning season (Dec to Mar). Which means for all you crab and crab roe lovers, you get the most succulent and tasty crabs available. Many would be familiar with the chilli and black pepper renditions in SG, but I urge you to try this white pepper version by JB Ah Meng. The firm & sweet crab meat, rich & creamy crab roe, lathered with a beautiful pepper sauce is among the best I've had. The garnish elevates this dish to a whole new level; the spring onion, garland chrysanthemum (the locals call it Tang Oh), and coriander provides a fresh herbacious balance to the savoury richness. Check this dish out while the crab season is here! 🔸

I am not a fan of white pepper. If given a choice between local white peppery Bak Kut Tell, and the Malaysian herbal counterpart, I'd choose the latter anyday. But the sauce of JB Ah Meng's white pepper crab is simply magical, so much so that I forget that I'm eating a dish that has White Pepper in it and in it's name.

Whilst it can be a tad bit salty, I really enjoyed the dish alot. Its our first time here so I didn't reserve any crabs when I called to reserve the table, thinking that there might have stock. Oh boy were we wrong. Whilst we were ordering our food, we could hear staff from the kitchen shouting out the remaining stock of large and medium crabs, and the wait staff hustled us to quickly get the large ones before it was snapped out. And she was right. It snapped out before we finished our order. We settled for the small ones.

Lesson learnt. Reserve dem crabs, people!

You do need to pre order your crabs as they run out pretty fast. Their white pepper crabs are indeed the best I’ve had and unlike the chain seafood restaurants, these won’t burn a hole in your pocket.

The pièce de résistance of the evening – mounds of crab blanketed in a stir-fried sauce of top grade Sawarak white pepper, ginger and spring onions. The crab meat was sweet and tender, enhanced further by the piquant, peppery and slightly creamy sauce that was quite frankly, finger-lickin’ good. As an added bonus, the crab shells were chockful of bright orange roe! Absolutely worth its tag.

Taste: 4.5/5

Drenched in a dark grey sauce, the robust peppery favour is poised to bring a racy sensation to your tastebuds and yet the sweetness of the crab still manages to shine through.
The incredible gratification one will get after each bite of the succulent crabmeat is nothing short of mind blowing.
The only chink in the crab's armour is that the waiting time can be really long.
