Now this is a hokkien mee you know is going to be good before you eat it. For the middle portion of $5, the substantial portion of hokkien mee (is the drier version) are filled with load of seafood ingredients. The prawn broth is strong as well, and definitely goes very well with the savoury chilli! However, will be better if there was more wok hei. Definitely something to eat while you're around the area!

Snaking long queues can be found at the front of this Hokkien Mee store as it was awarded the Michelin Bib Gourmand & have been featured in the Michelin Guide.

Hong Heng Fried Sotong Prawn Mee is no stranger to those who frequent Tiong Bahru Marker with it's semi-wet stir-fried noodles and prawns cooked in prawn broth & a side of sweet sambal chilli.

It is a decent plate of hokkien mee no doubt, but I felt that it was lacking some wok hei (wok's smokiness) and a thicker prawn stock/base to bring out the flavours of the seafood used. Nonetheless, still one of the must-haves to go for (if the queue is short) when you're around!

This stall has been awarded Michelin Bib Gourmand and I think it serves up a pretty decent plate of Hokkien Mee ($4/5/6). The noodles are on the drier side, but still fragrant and infused with wok hei. There is a good amount of prawns, squid and pork slices. The chilli is not super spicy but it goes well with the noodles and a dash of lime juice. Although this is not my favourite hokkien mee as I generally prefer mine to be more saucy, this is still quite tasty.

Another @michelinguide hawker which has been on the Michelin bib gourmand list for consecutive years has much mixed reviews online๐Ÿค” so gonna give my personal take: I LOVE IT๐Ÿฅฐ itโ€™s worth my 20 mins queue๐Ÿ˜‚ I was lucky to join the queue 15 mins before peak lunch hours ๐Ÿ€ I found it comparable to old aiport road in terms of the wetness and flavor of the stock broth๐Ÿ’•the texture ( break length, slurp ness) of the noodles are similar as well - the difference maybe in the extend of wokhey fragrance and the sambal ๐ŸŒถ theirs have less eggy but stronger seafood broth flavor - the sambal is more spice than tangy - overall, i really enjoyed it becos of the stronger savory flavor๐Ÿคค personally I will queue again for this๐Ÿ‘those who tried do let me know how you find it!๐Ÿ˜Š

Generous amount of food and ingredients for $6. Taste wise - it is decent, with a subtle hint of wok hei. The alkaline taste of the noodles is still present though. Would have preferred if the wok hei was stronger.

Overall the dish is alright, but I wouldn't bother if there is a long queue. The dish also has other price options at $4 and $5.

Not the most glamorous photo, but we donโ€™t care, Hokkien mee is beautiful to us! One of our go-to spots in Singapore is Hong Heng Fried Sotong Prawn Mee at Tiong Bahru Food Centre. The Michelin Bib Gourmand awardee deserves its rightful title and theyโ€™ve never failed us with their sinfully good plates of Hokkien mee. We were so happy when we finally managed to get our hands on it the other day because weโ€™ve missed it so much! Canโ€™t wait to be able to eat this fresh on the spot when F&B venues are allowed to reopen again.

I am absolutely infatuated with hokkien mee and had high hopes because of its award. However, it felt lacking compared to the other Bib Gourmand hokkien mee, which was stunning.

While lacking wok hei, this plate of ๐—ต๐—ผ๐—ธ๐—ธ๐—ถ๐—ฒ๐—ป ๐—บ๐—ฒ๐—ฒ ($4) still contained a decent amount of flavour but honestly as a whole, it felt pretty bland to me โ€” though the chili and lime helped salvage the flatness somewhat. But even the chili, an important aspect of hokkien mee, felt a bit pedestrian. That's coming from someone who prefers Tiong Bahru Yi Sheng's supposedly more subdued flavours (but insanely good chili) over something more intense like Tian Tian Lai.

I would say the texture was marvelous though. A slightly wetter type but not too wet, where the noodles felt perfectly moist while retaining a good bite and springiness. Maybe it's an issue of consistency (I've seen reviews about it being super flavourful), but it's a pity the flavours didn't do justice to the great frying, which it truly deserved.

Flavourful slurpy noodles that had abosrb the rich stock well; generous amount of fresh Sotong, sliced pork & fish cake were used, prawn were normal.
Oh! They are towards the wetter side or more of those gravy kind.๐Ÿ˜‹ #teamwethokkienmee
A squeeze of lime and a mix of that sambal.
