Both the grilled duck's hearts as well the fried cheese and tapioca with espelette pepper were fine but for me, the hands-down winner amongst the snacks was the stormshell clam with rosemary sushi and aerated cream.
Aesthetically, I was reminded of the seashore with foam-edged waves but the taste was otherworldly. The delicate dashi and light, sweet cream rounded off obvious briny notes to birth a thing of new beauty.
