Brawn Terrine

The Brawn Terrine ($13++) exemplifies what The Guild calls "nose to tail eating". Sustainability & minimising food waste is admirable; this dish is made using pig's head (which supposedly contains a high level of collagen!). Brined for 6 days & thereafter braised for another 6 hours, this is what gives the meat that meltingly tender texture.

Understandably, some may be squeamish at the thought of eating pig's head. I guess this isn't for everyone, but it was memorable for me. I particularly liked its uniqueness, & also the flavours - robust, meaty, & served with pickled vegetables that cuts through that flavour, on top of crispy charred bread.

Pig’s head, spicy pickled vegetables, parsley, charred bread - this was a great starter! The charred bread was so amazingly garlicky and buttery and we really wished we had more of it (the portion served was 3 large pieces that we inhaled in minutes), and it went really well with the pig’s head terrine. A good starter to share!

Super worth it cos I don’t know many places where you can get a punch of flavour like this. Tasty Pig’s head terrine with spicy pickled veg, mopped up nicely with charred bread. That’s the way to start a meal.

The meltinyourmouth terrine is served warm, speckled with spicy pickled vegetables which gave a nice punch when eaten with the silky smooth and luxurious terrine. I am very happy. #theguildsg #burpple

The spicy pickled veg cuts away some of the greasiness while the charred bread soaks up all the juice and flavours within. The bread, however, was too harshly charred, causing the edges to be bitter and inedible.
