The uncle is no longer frying the noodles, and has been taken over supposedly by his daughter. The wok hei is still present in every strand of the rice noodle but there is a lack of savouriness. Perhaps a touch more of fish sauce might help elevate the flavour? Also, the regular portion is $4 and if you order the $5 portion, it comes with a single prawn which is not really justifiable for the additional cost.

Uncle Teng has been serving for well over 40 years, frying each order one at a time.

Known for being generous with ingredients, their version is also a little more premium than elsewhere, with crisp garlic chives, bouncy squid rings, and juicy deshelled prawns within.

Also doesn't skimp on the wispy egg, crisp bean sprouts, chewy lup cheong / dried cured pork sausage, tender fish cake, and plump blood cockles.

The noodles carry decent wok hei / breath of the wok, and the dish is less greasy too. Bold smoky sweet savoury salty flavours here. Nice.

Saw a few recommendations of this stall in Old Airport Food Center. Stall owner fries each order one by one. For 4 dollars you get a small plate of Kway Teow with lots of fish cakes, Chinese sausages and two large prawns. The Kway Teow is drier than normal, for wok heat, the prawns are very fresh. But overall nothing to shout about. For those who like their CKT less sweet, more savoury and drier.

Savoury stir fried rice noodles to warm your tummy. One of the must tries at this food centre.

They can be quite inconsistent these days especially if the grumpy old man is not the one cooking.

This time the old man was in good mood! Although slightly wetter than his usual, the plate of CKT was nicely fried with huge prawns and lots of other ingredients! I like! 😋
