The chashao was well seasoned with salt and pepper and carries a melt-in-the-mouth tenderness. The tofu was served together with the ebi dipping sauce, adding a distinct ebi taste and slight saltiness to the otherwise plain tofu, a unique twist to the usual shoyu-with-tofu dish.

The broth is from shrimp, fish and vegetables that boiling for a couple hours.
Itâs Very rich and thick.

Reminding me strangely of a cross between lobster bisque and a prawn-based marinara pasta, the signature dipping sauce of Ebi-tori Menzoâs Original Ebi Tsukemen ($17.90) comes pretty rich and robust. A delicious cross I might add, the sauce is where all the magic happens with its bold crustacean sweetness.
Served warm, the base was not too cloying for me as with tsukemen I get to decide and control how much sauce I want on my choice of cold noodles (hot noodles or rice). However, I can easily see the flavours turning jelat especially with its thick consistency. Hence, saving the day, squeeze the lemon wedge that was dished up with the bowl, into the dip for that added zestiness and to cut through the heaviness. The leeks, tomato, cress, mizuna (Japanese mustard greens) and sweet potato cubes too, delivering the same purpose and complementing the aromatics.
Whatâs more, you canât forget the lovely slab of chashao - all tender and succulent. The pleasant springy texture and al-dente bite of the noodles was great as well. And the piece of crusty baguette that seems a little out of place, to soak up all the intense, umami goodness!
As with every ramen store, gyozas are a great complementary side or snack that you can have by yourself or to share!
With the consistent theme of having ebi incorporated into their dishes, youâd find shrimp mixed with minced pork as a stuffing for the gyoza being being wrapped and pan-fried.
The skin was thin and gently held the stuffings together, and comes with a chilli-vinaigrette dipping sauce on the side. While the sauce was a good compliment, the portion of ingredients used in the gyoza was a little underwhelming.
Perhaps at this price point, getting the set menu wouldâve been better, where you top up $3 to add on gyoza to your ramen.
This might look like a salad, but itâs actually Ebi Toriâs Signature Tsukemen with their thick and spicy ebi dip. đ Loved their QQ ramen noodles that was pretty addictive with that intense, thick prawn sauce. Plunge your noodles in for a concentrated ebi flavour though it can get a bit heavy. Shoutouts to their âcha siewâ thatâs really an extremely tender braised pork belly that we all loved, but be warned, itâs not for the faint of heart.
