These fellas know their stuff. Not every pie worked for me, but that means you'll find something to like here. Special shout-out to the petit tarts. I liked the first (from left), an adaptation of Pierre Herme's hazelnut dessert, and third, a pistachio tart featuring pistachio financier, Sicilian pistachio cremeux and Iranian pistachios. Don't miss the fourth, a verrine comprising foie gras ganache, cognac gel, fig, hazelnut dragees and cherry jam.
