Serving the same menu as the award-winning The Old Man Hong Kong did when it first launched - the Singapore bar is its first foreign transplant - the cosy and laid-back bar pays homage to Ernest Hemingway’s works with a fixed menu of experimental cocktails using glorious, state-of-the-art technological wizardry that would make the knees of any Amy Farrah Fowler go weak and wobbly. (My knees were also soft, not just from the killer concoctions but also from accidentally watching the amorous endeavours taking place across the room.)

The latter is a sparkling, saline refreshment, while the former plays it like the most complex, layered and dangerous grass jelly drink you’ve ever had.
