Available for lunch and dinner 7 days a week, it is priced at $168++ and is perfect for 4 people or 6 (if it’s supplemented by a couple of other items).

The 1.5kg grouper is first presented on a large platter cooked in two ways (do note what is shown in my video is less than the usual as there were only 3 of us dining that day). On the lighter side is the fillet sautéed with spongey pieces of luffa and silky blobs of egg white in dried scallops. The other execution has the fish belly braised in a rich and umami clam sauce with squares of puffy beancurd and crunchy ginger chunks. Both styles are superbly done, and I think, best enjoyed with a bowl of plain rice.

The third way of preparation, a soup brewed from the grouper’s head and bones, is truly zero waste at its tastiest. Served in a large tea cup, the steaming hot liquid is sweet and has a luxurious mouthfeel. If you have any rice left, pop it in to enjoy a mini bite of “Pao Fan”.
