Paying homage to famous musicians, this is named for the 1981 'Under Pressure' song by Queen and David Bowie.

It features a slow cooked, sous vide, 150g black angus beef patty, shaved fennel, lemon juice, tomato ketchup, truffle aioli, sliced tomato, and brie de meaux cheese, all sandwiched between fluffy soft, toasted demi brioche burger buns.

Incredibly messy, juicy, tender, with bold savoury sweet earthy flavours. While it lacks the smoky finish of a grill, it's still satisfiying.
