A refreshing change from the usual cream, tomato or aglio-olio base, I thought that the Soft Shell Crab Wafu Pasta (S$13.50) was a refreshing and a compatible pairing. Because the Dashi broth packed a mild umami taste, tossing in some mushrooms and spaghetti only lightens the carb-loaded main course.

Of course, the soft shell crab was already cut into halves for easy consumption, so using a knife is not necessary. However, if the soft shell crab is more lightly-battered, it probably would not be as hard and eating it together with the dashi broth would be a similar experience to dipping tempura into tempura sauce.
