While the filling was exceptionally melty and airy, I personally felt that the cheese taste was too light and intentional effort was required just to catch a hint of the cheesiness. A spoonfuls later, it just felt like I was digging into a cloud of air – that has no taste. The only distinct flavour was the apricot sauce spread on top - but isn’t the cheese supposed to be the star here? Diners who prefer a lighter cheese flavour will probably take a liking to this, for other diners, I recommend other dishes on Pablo’s menu instead.
