Start off with the Hamachi ($22), a Japanese-inspired carpaccio of yellowtail kingfish, with salmon roe and truffle. Then, move on to the sublime Canard Confit ($28) – a classic French duck confit with thin, crackly skin and exceedingly tender, flavourful, and juicy meat – probably one of the best you'll ever have.
