One of their signature cakes, Ai Cafe’s Matcha Goma ($9.80) is a must-try for black sesame lovers as the nutty flavour was rather pronounced in my opinion. Apart from the dominant goma taste, the cake was none too sweet and had a great medley of textures. Encased within a soft matcha mousse gateau, the bamboo-shaped cake spots delicate layers of black sesame mousse, crisp-crunchy feuilletine, and matcha sponge. Alone, the mousse gateau had a nice yet light earthy note. The mousse and feuilletine hid within, on the other hand, was richer and featured the deep aromatic flavours of the sesame. The crumbly base of buttery vanilla sable also offered an extra bit of bite.
