Ngl when I first saw this im like I messed up, I'm gonna pay 50 for this plain looking thing. But one bite and I was floored, this is transcendental stuff

I guess the bias comes from thinking it's something you can reproduce at home, but while it's possible to reproduce the colour it's impossible to produce the flavour. Every aspect was impeccable, the umami was so strong yet not overhwelming. Really, really delicious and the fish maw was the element that blew my mind.

We've all had soggy fish maw in soups but here they made it almost have a fishcake like bounce. Definitely get yo ass down here and visit national gallery otw haha
