Incongruous though it might sound, all the seemingly mismatched elements in this sandwich are in perfect sync - the flaky tenderness of of the smoked barramundi is complemented by the slight crunch of ponzu kangkong and acidity of pickled shallot, whilst the garlic chive cream cheese slathered on the insides of the thin and crisp toasted sourdough provided a fatty unctuousness with each bite. If only more cafes served up more of such innovative fare instead of the generic brunch items that have been done to death.
