My favourite dish of the night! We were clearly confused when we heard that this pot of soup was prepared without a single drop of water. Yes what?!? 😂 It’s actually done by a special pressure-steaming technique where they pressure-steam the black feet chickens to get its essence. Although you can see a layer of oil, it wasn’t at all greasy and in fact, it was comforting and delicate.

There’s 2 ways to enjoy the chicken meat, one is directly out of the pot (we liked the natural sweetness and flavour), while the other is to have it tossed with beansprouts and a small jar of chili oil mix.
