If you love springy curly noodles, you must try this kolo mee from Lin Yu Mei. The auntie cooks the noodles via a 3-step process - hot, cold, hot - before tossing them in a pool of condiments that she concocts so effortlessly. The star of the show here is definitely the noodles - they're QQ without the alkaline aftertaste and very, very fragrant. Unlike your regular wanton mee, these come with a heaping of minced pork and subpar char siew, but I'm willing to give the latter a miss just for these superb noodles.
