Far from the impression that broccoli stems are extremely tough & unpleasant, these are steamed & slow-roasted to impart a highly manageable good bite while locking in its natural sweetness. ๐๐๐ The chef has certainly done a great job in turning this raw ingredient that is usually discarded into something really pleasant! I will never look at broccoli stem the same way I did! ๐ฏ

The star of the dish has got to be the pork collar ends! โญโญโญ Judging from its thick cut/size, I was expecting a really tough chunk of meat but my worries were totally uncalled for! ๐๐ป Being a less popular cut as it has a tougher texture, these are sous-vided before roasting, resulting in a huge pinkish chunk of meat with slits of juicy fats that is pull-apart tender. ๐

Laid on some broccoli puree, drizzled with coffee shoyu & burnt onion jus, everything was on point for this dish for me. โ So good that it kept me wanting more! ๐๐๐
