Sandwiched between toasted halves of a hand-rolled garlic bagel, Two Men Bagel House’s Hawaiian ($10) was foolproof - certainly a safe option and very well-executed. Loaded with spam, cheddar, sunny egg and caramelised pineapple; I had decided to switch things up in the classic breakfast-style order by adding Smoked Brisket (+$5) in the mix and removed the pineapple. Smoky, juicy and just full of caramelized flavour, the beef brisket really stole the show but didn't seem to overshadow the other ingredients in my opinion. Admittedly, it was not date-friendly food (greasy hands and all). A messy and meaty affair, the combination was so satisfying! Think big bites of thick yet soft spam complementing the usual staple items - the egg, savoury cheddar cheese and a layer of crunchy greens with a hint of spice from the sauces.
