While Amara Singapore is still serving the classics for CNY this year, those with a more adventurous palate can opt for their mala series that includes Chuan Xiang Mala Treasure Pot, Sichuan Mala Yusheng, Roast Chicken with Sichuan Mala Sauce, and this Grilled Red Garoupa with Mala Sauce.

What I like about Amara Singapore's mala dishes is that they have spice level thoughtfully tuned for each dish. While the pencai has its spice level tuned down to suit the whole family, and the mala roast chicken with the option to the mala sauce served on the side, this fish will give you the full blast of mala spices to satisfy the cravings of those who need really spicy food (like me).

Besides their Mala series, Amara Singapore will also be serving a plethora of classic delicacies including traditional crowd favourites, such as the Prosperity Eight Treasures Yusheng and Claypot Rice. A special Lunar New Year Eve set is available ‪on 24 Jan‬ from $688++ for a table of 10 pax, or $388++ per table of 5 pax. Other CNY menu and ala carte menu is available ‪from 25 Jan to 8 Feb.‬
