Looked a little dry, but the fish was actually firm to the bite and sufficiently tender. Think the batter could be just a teeny bit thinner and lighter, but the mala chili helped to spice up the whole dish a lot. It actually reminded me of barbecue stingray! Apart from their signature steamboats, Ding Xian has a variety of cooked food options like this.
